Fishery New Zealand Rules & Regulations

Measure red or spiny rock lobster tail width in a straight line, between the tips of the two large (primary) spines on the second segment of the tail. If you’re not sure what sex the lobster is, use the 60mm measurement.

You can determine sex by these characteristics:

  • females have small pincers on the rear pair of legs
    females have:
    • pleopods (see diagram) which:
      are in the paired form on the underside of their tails
      have a feathery appearance (“hairs”), which they use to look after their eggs
  • males have pleopods (see diagram) in a single form on the underside of their tails.

How To prepare cray fish

To halve:

Place the crayfish stomach side down on a work surface and using a very sharp knife, cut forward from the back of the head area and press down the length of the body firmly to halve. Turn crayfish around to cut through the tail. Remove the insides, rinse under water and pat dry with a paper towel.

To GRILL:

Cut the cray in half lengthwise, baste with a delicate marinade and grill flesh-side up until flesh turns opaque.
